Wondrous One Ingredient “Ice Cream” July 16, 2012

For those of you who can’t have sugar, dairy or eggs, this one’s for you! All it takes is bananas. We were very surprised at how easy this “ice cream” was to make, and how tasty and creamy it was. Like banana bread, it works best with very ripe bananas. All you need to do is slice up the bananas (I used about one banana per person and it was more than enough), spread them out on a plate, freeze them for a couple hours, and then blend them up until they’re creamy. And voilà, a delicious, creamy treat fit for pretty much anyone!

You can also add various things to enhance the flavour; I put in some vanilla bean paste and cinnamon. The page where I found the recipe, which you can find here, has all kinds of suggestions of things to add in: maple syrup, peanut butter, cocoa powder, Nutella, etc. I haven’t had a chance to make it again to add different things, but they all sound delicious! We found it was at its best when eaten immediately. We had some leftovers to eat the next day, and they were also good, but a bit more like a popsicle than ice cream. I think you could easily re-blend it to make it creamy again.

It is a super-easy dessert, perfect for a hot summer day when you want something refreshing, and don’t want to work hard for it. So let those bananas age gracefully, and then reward yourself with a guilt-free creamy delight!
